Ka-pow! Ka-boom! Ka-bacon!

Last night was interesting.

Bacon. Explosions. Robots. Kung-fu. Machine guns. Trinity.

I don’t know if it was the fact that I made peanut butter chocolate chip bacon cookies (which is a story for another day), or that The Matrix just happened to be on, but I felt very manly last night.

Well, as manly as you can feel baking cookies and watching a movie on AMC.

So, I decided to make something very manly for supper. And what’s manlier than a big ol’ bacon, egg and cheese sandwich? How about a big ol’ bacon, egg and cheese sandwich slathered with a Manly Mayo — one made with lots of garlic and that uber-masculine spice mix known as Montreal Steak Seasoning?

Ka-pow! Now we’re talkin’.

EBLT Sandwich with Manly Mayo
For the sandwich:
– 4 slices of thick-cut bacon
– 2 eggs
– 2 slices of thick white bread, lightly toasted
– 2 slices of American cheese
– Tomato slices
– Romaine lettuce leaves
– Salt and pepper
– Cooking spray

For the mayo:
– 2 tablespoons of mayonnaise
– 1 teaspoon of minced garlic
– 1 teaspoon of Montreal Steak Seasoning (more/less depending on preference)

Start by making the Manly Mayo. Mix the mayonnaise, minced garlic and Montreal Steak Seasoning in a small ramekin. Set aside.

Fry the bacon until crisp. Place on a paper towel-lined plate and set aside.

Spray some cooking spray into a small pan and heat it on medium. Slowly pour both eggs into the pan, season with pepper and fry until the whites have set but are still soft. Gently flip the eggs over and fry another minute or so.

To build the sandwich, spread Manly Mayo on both slices of toasted bread. On one piece, layer the bacon slices, tomatoes (seasoned with a little salt & pepper), lettuce and cheese. Slide the fried eggs on the cheese then top with the other slice of bread. Cut in half and eat.

Or should I say, destroy? This sandwich rocks. Every single bite is loaded with garlic and spices. The crunch of the bread and bacon combined with the crisp veggies and runny eggs make for something truly amazing. Make it the next time you’re feeling extra manly. Maybe tonight. Or right now.

    This is creepy weird. I was going to say word-for-word what Greg said in the first sentence. He stole my thunder. Anyways, great looking sandwich! Love the steak seasoning in the mayonnaise.
