My birthday was this past weekend. And rather than complain about how old I’m getting, I thought I’d treat myself to a breakfast that could make me feel like a kid again. Even if that “kid” was nursing a splitting headache due to some very grown-up activities the night before. Oof.
Luckily, this sandwich is incredibly easy to make and combines several things that all so-called adults need after the morning after a fun night: cheesy, greasy, meaty and eggy. Basically, it’s just a grilled ham and cheese sandwich but adds the egg-in-a-hole trick to one of the slices of bread. So in the end, your entire breakfast is in your hands. It’s easier to wolf down that way. Trust me.
Eggcellent Grilled Ham & Cheese Sandwich
– 1 tablespoon of butter or margarine
– 2 slices of split-top wheat bread
– 1 large egg
– 2 slices of white American cheese
– 2 slices of honey ham, thinly sliced
– Dijon mustard
– Salt and pepper
Cut a 2 ½ inch hole in the center of one slice of bread, and spread Dijon mustard on one side of the other slice. Add 1 tablespoon of butter to a nonstick pan over medium-low heat. When the butter starts to foam, add the cut slice of bread and lightly toast for about 1 minute. Crack the egg into the hole, season with salt and pepper and fry until the bread is golden brown and the egg has started to set. Carefully flip the egg bread over and then add the cheese, ham and the other slice of bread, Dijon side down. Fry until well browned on the bottom and then flip again. Fry until the bread is golden brown and the cheese has melted. Remove from the pan, cut diagonally and eat.
